Wonderful light and refreshing way to end a dinner. If you like key lime pie, you will love this. Easy to make.
Juice of fresh key limes to make 1 cup 10-12 more if using small key limes 2 sleeves of Maria Cookies 1 8 ounce package of cream cheese 1 14 oz can Sweetened Condensed milk (Leche Condenseda Azucarada) 1 12 oz can Evaporated milk (Leche evaporada) zest of one lime 1/2 cup sugar mixed with 1/4 cup water
Please do not substitute any ingredients as this dessert looses it's taste. First get cream cheese to room temperature. Whip till smooth. Set aside. Use hand held juicer to squeeze key limes making one cup. Add both cans of milk to cream cheese and mix it will appear to much liquid but just wait. Add lime juice carefully. It will begin to thicken. Make sure all is blended, cover, and refrigerate.
Take water and sugar heat to make a simple syrup. Let cool.
Use an 8 11 Pyrex dish. Lay out cookies side by side cutting in half to fit making even rows Gather cookies, sugar mixture, and cream cheese mixer and begin to assemble. Dip cookies one at a time into sugar/water syrup and make first layer. Pour some of the cream cheese mixture over cookies, use spatula to spread evenly and not move cookies. You will repeat process till the top layer is just the cream cheese mixture. Keep in mind to make an even layer of cream cheese mixture for every layer. It's a balance, so take your time Grate lime on top.
Refrigerate for up to a day.
